PKU or Phenylketonuria is a rare genetic metabolic disorder. The liver cells are unable to effectively break down the amino acid called phenylalanine, which is present in most foods. When left untreated, this builds up in the bloodstream becoming toxic and over time rises to dangerous levels, damaging the brain causing mental retardation and other irreversible affects. People with PKU must adhere to a strict diet which restricts the amount of protein consumed. This has to be monitored carefully. A first edition cookbook was developed by Jo Boston, a mother of a PKU child. A second edition was needed with a fresh new design and feel. Images used had to be carefully selected to exclude certain proteins. The cookbook is 96 pages with 206 recipes included. Content ranges from Breakfast, Lunch, Pasta Dishes, Children’s Parties, Vegetables dishes, Drinks, Desserts and much more.
